This might be one of my most favorite meals. It is SO delicious! Fresh, crispy and satisfying. It’s definitely perfect for a summer day, or cookout, but I eat it at any time of the year.
I had never tried couscous before, and bought it on a whim. I’m so glad I did because it’s now my favorite! This recipe is super easy to make, and honestly you’ll be wanting more after the first bite.
(this recipe serves 4. Can be served warm or cold)
1 cup Pearl Couscous
1 avocado, halved, seeded, peeled and diced
1/2 cup corn kernels
1/2 cup strawberries, quartered
2 tablespoons chopped fresh cilantro leaves
For the lime vinaigrette
2 tbsp cup olive oil
2 tbsp cup apple cider vinegar
Zest of 1 lime
2 tablespoons freshly squeezed lime juice
2 teaspoons sugar, or more to taste
Make couscous according to package directions.
To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest and juice, and sugar in a small bowl; set aside.
In a large bowl, combine couscous, avocado, corn, strawberries, and cilantro. Stir in lime vinaigrette.
Serve and enjoy!
