Carrot-Not Dogs

Growing up, hot dogs were one of my all time favorite foods. Literally that and mac and cheese were all I wanted to eat.  I was a skinny little brat, who barely ate much but give me a hot dog and I’d eat it.  Gross, I know.  I realize how disgusting they are now, and could never, ever eat one today.

Last year I went to a local vegan restaurant, and saw Carrot Hot Dog on the menu. I had never tried one, nor heard of that alternative.  Needless to say, I was intrigued and knew I had to try it.  Boy, was I glad I did! It was super delicious!  I knew I had to try and replicate the recipe, or at least try to.  I found this recipe online, and gave it a try. They were pretty yummy!!

Wash and peel the carrots. Boil them until soft but not mushy (don’t add any salt just yet). I boiled mine for about 5-10 minutes, depending on the size of the carrot. I typically check after 5, and go from there.

Drain and let them cool down. Mix oil with salt, herbs, paprika powder, soy sauce and water. Peel the carrots and put them into a plastic bag. Cover the carrots with marinade and let them marinate in the fridge for at least a few hours or overnight.

Take marinated carrots and grill them until they have grill marks and start to get much more darker.

Take a hot dog bun and cut it open. Cover the inner sides of the bun with a little bit of ketchup. Add a lettuce leave, grilled carrot and top it all with your favorite toppings! Enjoy!

For the carrots:
8 large carrots
1 Tbsp oil
1 ½ tsp salt
1 tsp dried oregano
1 tsp dried thyme
2 heaping tsp paprika powder
1 ½ Tbsp soy sauce
½ cup water
