I’ve been on a dessert kick lately! I came across a recipe online for some cookie bars. I had some chocolate chips on hand and wanted to make something other than the typical chocolate chip cookies. These are SO easy to make, they require zero cooking or use of a stove. Which is great for those hot summer days when you have no desire to turn that stove on. These are really delicious, and great to cure any sweet craving.
1 cup almond butter (or peanut butter)
2/3 cup coconut oil, melted
1/4 cup agave syrup
2 cups organic shredded coconut, unsweetened
2 tsp vanilla extract
2/3 cup vegan chocolate chips
Mix everything but the chocolate chips together in a food processor or mixer.
Add the chocolate chips and stir or pulse briefly.
Pour/spoon onto a parchment paper covered cookie sheet
and refrigerate for an hour or so until firm.
Cut into bars.This recipe will make 18-24 bars.
