Raw Vegan Pasta Sauce

Hello everyone!

First, I am so sorry I haven’t posted any new recipes in a while.  This is my busy time of year for my photography business, and I just got back from a much needed vacation!  I have lots of recipes coming your way, so be on the lookout and be sure to subscribe to my blog so you can stay up to date on new recipes.

So, a lot of the new recipes you’ll notice are not only vegan, but gluten free as well.  My doctor believes I may have Celiac disease (oh joy!) and suggested I try a gluten free diet for a few weeks to see how I feel.  A lot of those recipes will be Raw, meaning I use all natural found ingredients, nothing processed!  A lot healthier for you.

First up is a Raw Pasta Sauce I tried! I made it from scratch, and love it!  It is sooooo easy to make!! Seriously!  Give it a try!

Slice the tomatoes into four or five slices, and place them in a food processor.

Chop the walnuts!

Add the rest of the ingredients to the food processor.

Once everything is in the blender, give it a few pulses until everything is very well chopped. Do not put this on a high powered blender like Vitamix, because you will end up with orange sauce. You can either cook the sauce right away, or store it in a glass jar in the fridge until you’re ready to cook it.

Cook sauce in oven or stove to get a cooked flavor, before topping on pasta.

Yields: Enough sauce for 1-2 people (2 cups of pasta).  This recipe easily doubles as well!

Raw Vegan Marinara Sauce
3 Roma tomatoes
¼ cup sundried tomatoes in olive oil & Italian herbs
1 tablespoon crushed walnuts
1 teaspoon dried oregano
1/2 teaspoon onion powder (or 1 tablespoon chopped red onion)
1 teaspoon smoked paprika
10-15 fresh basil leaves (or 1 tablespoon dried basil)
1 pitted date
A few sprinkles ground pepper
A few sprinkles Himalayan/sea salt

*I didn’t add any garlic because I didn’t have any on hand. However, next time I’ll probably add some in.  Feel free to experiment!
