Mango-Blueberry Salad

Sometimes I just crave fruit!  I could eat an entire fruit salad in one sitting.  While healthy, all that sugar isn’t all that good for you.  I was trying to think of what I wanted for lunch on a hot summer day, and just kept wanting fruit. So, I made myself a delicious fruit salad for lunch!

I looked in my fridge and saw I had some blueberries and mango, and knew they’d go good together.  Paired with an avocado, and some lime juice, this fresh tasting salad came together so well. The combination of mango, blueberries and avocados in this salad is so delicious and the colors are just so beautiful!

This salad is a perfect lunch for a hot outdoor day or as an appetizer for your next dinner on the grill. It would probably even work well for a potluck dish at your next cookout. The possibilities are endless!

Chop the mango. If you’re like me, and have no clue how to cut a mango, click HERE for instructions. Or, you can purchase pre-cut mangos. I won’t judge, I promise!

Dice the avocado! Again, if you aren’t sure how, here’s a how-to video

Combine the mangoes, avocado, and cilantro in a medium bowl.

Zest and juice one lime.

Combine the lime zest, lime juice, olive oil, and salt in a small bowl and mix to combine.

Pour over the mango mixture and stir to combine.

Serve immediately – as a lunch for one or side salad for two.

INGREDIENTS
2 mangoes, cubed
1 avocado, diced
2/3 cup blueberries
1/4 cup chopped cilantro
zest of one lime
juice of one lime
1 teaspoon coconut oil
pinch of salt

INSTRUCTIONS
Combine the mangoes, avocado, and cilantro in a medium bowl.
Combine the lime zest, lime juice, coconut oil, and salt in a small bowl and mix to combine.
Pour over the mango mixture and stir to combine.
Serve immediately – as a lunch for one or side salad for two.
