I’ve been experimenting with different ways to make a breaded tofu. Something with a crispy coating, and juicy inside. And, something that is not only vegan, but gluten free as well! I played around with different breadcrumbs and different ways to prepare it. Adding in nutritional yeast not only adds in some extra nutrients, but it seems to help the “breading” stick to the tofu better! From frying it in a pan, to grilling it, to baking it. I finally came up with a recipe that I feel is perfect!
I know this isn’t the healthiest meal, but it is so delicious! I used to love a frozen breaded tofu patty, but since I’ve gone gluten free, I can’t have it anymore. I wanted to find a good alternative. Plus, I know exactly what is going into my recipe, so I know it’s 100% vegan and gluten free.
I usually pair this with a bowl of veggies. My favorite is roasted sweet potatoes, avocado, and black beans. Lot’s of protein, good fats and vitamins!
If you try this, let me know! I also love hearing your thoughts on the recipe and what you paired it with or did differently. 🙂
Press the tofu for 30 minutes. (Here’s a how to post HERE)
Smother the tofu in BBQ sauce. Cover and put in the fridge to marinate for about an hour.
Meanwhile, mix all of the breading ingredients in a bowl. (I put it in a glass jar, do I don’t waste any extra!)
Heat the oven to 375ºF. Once the tofu has completed marinating, cover it entirely with the coating. There will be some extra, but make sure all sides are covered with it.
Place the tofu in a greased baking dish. Drizzle some oil over the tofu. Bake the tofu in the oven for 15 minutes, flip it over and then bake it for an additional 15 minutes.
Serve over some vegetables or cut into nuggets, and enjoy!
