Today’s recipe is a super easy salad that has roasted chickpeas and quinoa, along with apple, cranberries, yellow peppers, walnuts and more goodies! A bowl packed with nutrition.
Drain and rinse your chickpeas.
Place chickpeas on a baking sheet. Season with a little salt and pepper. Drizzle the coconut oil on and then the cinnamon. Mix together well. Bake for 10-15 minutes, or until chickpeas are a little crispy.
While they bake, cook your quinoa following the package instructions.
Chop your veggies!
Place the quinoa in a large bowl and add the onions, apple, bell pepper, chick peas, cranberries and walnuts.
Pour your favorite vinaigrette dressing over the quinoa salad and stir to combine.
This salad is good served at room temperature or chilled.
Cranberry Apple Quinoa Salad
Serves 2
1 cup chick peas, drained and rinsed
1 teaspoon coconut oil
1 teaspoon cinnamon
Salt and pepper to taste
1 cup cooked quinoa
¼ cup red onions, diced
½ cup apple, diced
½ cup yellow bell pepper, diced
¼ cup dried cranberries
¼ cup walnuts, chopped
