Sweet Potato Toast

Sweet Potato Toast is delicious!  It’s an easy way to have a healthy breakfast that is gluten-free, paleo-friendly and vegan. And an amazing, healthy way to start the day!

I love this toast because it is SO versatile.  You can make your own toppings, and have some fun.  Sweet or savory toppings work, so the possibilities are endless.  I’m going to share three of my personal favorite topping ideas, below.

First, is the mashed avocado, tofu scramble and chia seeds.

After toasting your sweet potato, mash about half an Avocado on one slice of your “toast”.  Top with your tofu scramble (click for the recipe!), and then some chia seeds. I love chia seeds because they are They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients.  This toast is a power-house of protein, fiber and nutrients!  A terrific way to start your day.

Next, we have an easy recipe that is probably a number one favorite.  I mean, who doesn’t love nut nutter and bananas?!

Almond butter, sliced banana, chia and hemp seeds

This sweet potato toast has almond butter, sliced banana, chia and hemp seeds.  I spread the almond butter on right after I took the sweet potato out of the oven, so it melted on top. Mmmm!  You can substitute any nut butter or sun butter if you’re allergic to nuts. The chia and hemp seeds add some extra fiber, Omega-3s and protein.  Another top favorite of mine!

Last, we have a sweet hippie one, as I like to call it!

Jam, sliced apples and pepitas

This last one I spread some strawberry jam, sliced granny smith apple and pepitas (pumpkin seeds).  This sounds a little weird, but it tasted great!  The sweetness of the jam, paired with the tart apples and salty seeds was delicious!  It’s probably the easiest one to make as the only thing you have to do besides toast, is chop an apple up.  I mean, how easy can you get?!

Sweet Potato Toast

  • Servings: 1-2

A super easy & healthy vegan breakfast or snack!

Ingredients


1 large sweet potato
Toppings of choice (peanut butter and banana, jam and apples, avocado, tofu etc)

Directions

Directions:

  1. Slice sweet potato into 1/4-inch long vertical slices.
  2. Turn toaster all the way up to high and toast sweet potato slices twice. If yours isn’t fully cooked or slightly browned after two times, you can toast it a third time.
  3. Top with your favorite sweet or savory toppings and enjoy!

My favorite toppings:

mashed avocado with tofu scramble

almond butter, sliced banana and chia + hemp seeds

jam with sliced apples and peptias

The possibilities are endless!

Notes: Extra uncooked sweet potato slices can be stored in the refrigerator, in a plastic bag or container, for up to 10 days.

You can also save any misshapen pieces or the small ends for a hash or breakfast scramble.
